Oreo Cheesecakes


oh how i love thee. youre the reason why i had to get myself a new pair of running shoes….. (=w=) they’re easy to make, only needs one bowl to mix it up in. so cute, and you can make them as mini cup cakes instead of the regular sized cupcakes. theyre so cute as the minis (: if you want to, you can make some one day, and then save the batter, and bake the rest of it another day. it should be good for up to a week. just dont add in all the crushed oreos, or they’ll get soggy.

what you need:

  • a pack of oreos for the regular sized, or a bag grab-it and go mini oreos
  • 2 lbs cream cheese (thats 4 boxes of the regular sized thingys)
  • 1 c. sugar
  • 1 tsp vanilla
  • 4 large eggs
  • 1 c. sour cream
  • 1/4 tsp salt

Prep your oven to 275.

reserve 24 oreos for regular sized cupcakes, and 48 for mini’s, and crush the rest up roughly.

dump your cream cheese in a bowl, and beat until its smooth and creamy..ish. slowly add in your sugar, and then beat in your vanilla and mix until smooth and incorporated. add in eggs, one at a time, and then add sour cream and salt. see one nice happy family of creamy goodness. fold in your crushed oreos, and its now ready to bake 😀

take your cupcake pans, lput in cupcake liners, and drop your reserved oreos, and drop one in each. take your handy dandy ice cream scoop (for even measurements) and fill each cupcake with a full scoop. bake them for 22-28 minutes until its set, and its jiggly in the center. for mini’s bake them for 12-15 minutes. take the handle of a spoon… or fork… or knife… and carefully take out the cheesecakes if youre going to use the pan again. place them on a baking pan, bake off the rest if thats what you wish, and refridgerate them overnight, or until firm. voila, you have oreo cheesecakes!
