Caramel Apple Muffins

this recipe is officially dedicated to Sebastian’s gramma XDDD because she loves ’em so much

theyre sooo yummy its not even funny…. then again… i think that a lot of things are yummy XDD

every bite, you get some chewy caramel, a chunk of apple, and a sensation of cinnamon deliciousness.

what you need:

  • 2 c. flour
  • 3/4 c. sugar
  • 2 tsps baking powder
  • 1 1/2 tsps cinnamon
  • 1 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 egg
  • 1 c. milk
  • 1/4 c. butter (1/2 a stick) melted
  • 1 1/2 tsp vanilla extract
  • 1 granny smith apple, peeled, and diced into 1/2 ish inch cubes
  • 1/4 c. caramel sauce from here + more for topping (or just get some chewy caramel candies and chop them up for your muffins, and melt them down for topping)

Preheat your oven to 350°F. line a cupcake pan (12 cupcakes) with your cupcake liners, and set aside

in a bowl, sift together your flour, sugar, baking powder, spices and salt. in another bowl, mix your egg, milk, butter and extract. dump the wet mix into the dry mix, and beat until thoroughly mixed together.

(tip: if you dont want brown apples when you add in your apples, peel and chop now)

add in your chopped apples, and drizzle, and i mean drizzle in your caramel sauce. you dont want just a huge chunk of caramel in your muffins.

tada your batter’s done. now fill each cupcake 3/4 full, making sure to get some apple chunks into each one. now chuck em into your oven for 20-25 minutes, or until a toothpick comes out clean. remove from the cupcake pans and then drizzle on caramel sauce in whatever fashion you oh so desire. let it cool for like 5 minutes, until you can handle one without burning yourself, and serve ’em warm.


tip: you can mix the batter at night, toss it into the fridge, and then in the morning, chop the apple, and add it in, and bake them off for fresh muffins in the morning 🙂 always makes my day better to have freshly baked food in the morning 😀
