Mini Apple Pies

Okay yenno at marie calendar’s when they have those big fat pie sales? and like you totally want to get every dang pie on their menu? dude, definitely been there, done that XD pie shops like that should make mini pies….. dude… that would be totally *o* then get them by the dozen and you could like get 12 kinds of pies…. all…single…serving… no more guilt (unless you eat 2 or 3)… no more cutting in a pie and having the filling fly everywhere… *gaspeth* AMAZING!!!!

what you need:

  • 2 c. flour
  • 12 tbs (3/4 c. or 1 1/2 sticks) cold butter
  • ice cold water
  • 1/8 c. flour
  • 1/3 c. sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 baking apples

Toss your 2c. flour in a bowl, and cut in the butter with a pastry cutter, or with a fork, until it resembles a course meal. then gradually add some cold water, 1 tbs at a time until the mixture pulls from the sides of the bowl to form a firm dough. wrap in plastic wrap and chuck it in the fridge for a good 15-20 minutes.

after chilling for a while, take out your dough and lightly flour your work surface and rolling pin. split your dough in 2. one should be a bit more than the other (bottom crust and top crust). take the bigger thing of dough and roll it out until its even and about 1/8 inch thick. stick the othger dough back into the fridge.

take a cupcake pan and grease thoroughly. you can use a mini cupcake pan and make bitesized pies. cute and adorable. then tear off pieces of the rolled out dough and press into the bottom of your pan, and make sure the piece is big enough to have extra to go up and over the sides. youre going to need it so then you can pinch your top crust to bottom crust. repeat to all your cupcake things. cover in plastic wrap and stick it in the fridge again… this will make your crust nice and flaky. yum

preheat your oven to 345° F, and then mix together your spices, 1/8 c. flour, sugar, and salt. then peel, and cut your apples into chunks, small enough that you can get a few pieces in each mini pie. toss together with your spice mix and then spoon into the pan things….

then roll out your 2nd dough part and cut out circles to top off your pies. pinch the edges of your pastries together and then pop it into the oven for 30-35 minutes. and then shmell it as it bakes up. if you want, then you can toss in some chopped up chewy caramel candies for an extra bite of sweetness and texture.
