Caramel coconut cookies

okay yes these are the knockoff version of the Girl Scouts samoas, but seriously, have you seen all the chemical crap that goes into them? as one of my teachers said “if you cant pronounce it the first time, then it probably ain’t healthy for you” so here ya go, now you know what goes in your cookie and you can now choose now much of what you get XD which i always wanted more coconut in the dang cookie

what you need:

  • 1/2 c. sugar
  • 3/4 c. butter, room temperature
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 c. flour
  • 1/4 tsp salt
  • 3 c. shredded coconut (doesnt matter if its sweetened or unsweetened, your preference on how sweet you want the dang thing to be)
  • 20 good quality chewy caramel candies (yes i supposed you can make the caramel yourself, but 20 candies is about how much you want)
  • 1/4 tsp salt
  • 3 tbs milk
  • 12 oz. semi sweet chocolate chips
preheat your oven to 350°, and then prep whatever pan youre going to use to form it in. making it in one huge pan makes it so much easier to dip it in chocolate later, but i really hate the cutting-it-into-little-squares part
okay so yer gonna crem together your shooga (sugar) and your butter together until its all nice and fluffy… like a gold retriever :3 omg golden retriever puppies are so CUTE. i want one,….and a husky….. BACK TO BUSINESS.. okay once thats all creamed, then crack in your egg along with your vanilla extract and mix until its fully incorporated. then slowly sift in all your flour and salt. your concoction should be a little bit crumbly and it comes together like wet sand (which you all know, doesnt come to gether really well)
dump your dough into your pan and press until its even but doesnt necessarily have to be smooth, then poke holes with a fork so then it doesnt puff up like a furry monster (XDD i made myself a furry backpack, and named him Gustav) and then toss it into your oven for like 20-25 minutes, or until a light golden brown. yum
while thats chillin out, take your coconut, and chuck it on to a baking sheet and spread it out evenly. toss that in the oven to toast until golden brown with your dough-crust, stirring every 5 minutes to get a even golden brown (should be about 15-20 min) just keep an eye on them to make sure they dont burn
while thats toasting, then start to melt down your caramels, salt and milk in a pot, stirring to make sure that they dont burn. caution, use a wooden spoon, because plastic does melt in caramel…. and yes i learned the hard way.
once your coconut is all toasted, and your caramel is melted, then carefully dump your coconut into your caramel and stir to coat. and fold together. now once thats all together, then dollop your caramel-coconut onto your dough, and then spread evenly, your dolloping job will make spreading it a bit easier. now let it cool….. yes let it sit there and tempt you.
once its cool, then you can either cut it into bars now, and waste your time dipping each bar into the chocolate, or just keep it in a giant mass and just dump chocolate all at once XD
okay so now melt down your chocolate into a soup of gods and then dip your mass of cookie-coconut-caramel thing, cookie side down (the side with no coconut) into your melted yuminess, making sure to save some for decorative reasons
now place your chocolate bottomed cookie onto a waxed papered surface to cool and solidify, and while thats cooling, then drizzle your remaining chocolate on to, making sure to make it look pretty. let it cool and WHABAM you have your own knock off samoa cookie 😀
