Caramel Frosted Apple Muffins

okay honestly? WHAT IS WITH ME MEETING PEOPLE WITH ALLERGIES TO CINNAMON?!?!?! THE ONE THING I BAKE WITH THE MOST IS THE ONE THAT MY CLOSEST FRIENDS ARE ALLERGIC TO…..WTFFFFF…… there’s something wrong with this picture here…..

again, i apologize for that ridiculously long hiatus. School calls, and there’s also this little thing i deal with pretty much every day? its called BAND. yes. i am a band geek, AND PROUD OF IT THANK YOU VERY MUCH. anyways. marching season’s almost done, which means i’ll be able to post more regularly again. instead of this once-every-two-months kind of thing.

ANYWAYS. back to business. these things are delicious thing to have as a midnight snack, and such and such…or breakfast… or lunch.

eh… what the heck… theyre perfect for any time of the day.

what you need:

muffins:

  • 2 c. flour
  • 3/4 c. sugar
  • 2 tsp baking powder
  • 2 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 1 c. milk
  • 2 tsp vanilla extract
  • 1/2 c. chopped apple
topping
  • 1/2 c. brown sugar, packed
  • 1/4 c. quick cook oats
  • 3 tbs melted butter
  • 1 tsp ground cinnamon
frosting
  • 1/2 c. brown sugar, packed
  • 1/4 c. heavy cream or half n half
  • 1/4 c. butter cubed
  • 1 c. powdered sugar
Preheat your oven to the oh-so-holy 350° F, and prep your freaking muffin pan of awesomeness. seriously. muffin pans are awesome….. at least mine are. i definitely use them the most out of  any of my not-so-high-tech kitchen gadgets….. use cupcake liners, or the butter-sugar crust method that i oh-so-do love all the freaking time.
for your muffins, take the dry ingredients, and toss them together. sift em together, and get them mixed super de duper well. then whisk in your wet ingredients, and then GENTLY……GEN-TLE-YYYY YOU NUMNUTTERS. fold in your chopped apple. if youre doing this ahead of time, skip out on the apples until the few minutes before you assemble your muffins, otherwise, theyre going to turn brown, and theyre not going to be yummy. not at all.
plop some batter into your prepped muffin tins until theyre about ehhhhh 3/4 full i’d say? then mix together your topping ingredients and sprinkle that on top of your batter.
bake them for about 20-25 minutes ish. until a toothpick thats poked through the center of the muffin, NOT the center of the topping, comes out clean.
after you take that out of the oven, let them cool for awhile while youre making up this really fattening delicious frosting. in a sauce pan, combine your brown sugar, heavy cream and butter. let it come to a pretty brisk boil, and cook for like 2 minutes until smooth, and yummy looking XD then SIFT in your powdered sugar. its ridiculously important to sift it in so then you dont get this huge lumps of sugar everywhere which totally ruin its prettyness. mix until its smooth, and then drizzle all over your warm muffins. tadaaaa youre done. eat warm with a scoop of vanilla ice cream, or eat it on the freaking go
