Pecan Pie Bars

okay so once again, i sincerely apologize for the lack of posts for the past month. I’ve had to deal with the last week of school, and finals, and other school stuff…. not to mention my costume for comic-con. so now that it’s summer, and now that school’s over, then posts will be put up more regularly XD.

So…Pecan Bars…. who said that it was just made for thanksgiving? i love pecans…. and nuts in general… not to sound dirty or anything. but i love walnuts in brownies, almonds in my ice cream, pecans in my cinnamon rolls and apple strudel, honey roasted peanuts, macadamia nuts in my cookies…. wowzah. i love them all for different reasons XD


 what you need:

For crust:

  • 1 c. butter, softened
  • 2/3 c. brown sugar, packed
  • 2 2/3 c. flour
  • ½ tsp salt

For topping:

  • 1/2 c. butter
  • 1 c. brown sugar, packed
  • 1/3 c. honey
  • 2 tbs heavy cream
  • 2 c. chopped pecans


preheat the oven to 350° and line a 13″ x 9″ baking pan with foiling, leaving a 2″ overhang on each side

then take the sugar and butter for the crust and cream it together. add in the salt and flour, and mix until crumbly.

press it into an even layer into the pan and bake for 20 minutes, or until golden brown.


While the crust is baking:

toss everything for the topping, toss everything except the pecans into a deep saucepan and heat it until it comes to a simmer, stirring constantly. let it simmer for a minute or so, and then stir in the pecans.

take out the crust from the oven and immediately pour the hot caramel pecan mix onto the crust, and spread it into an even layer. bake for another 20 minutes.

remove the pan and then let the whole thing cool completely. then lift the entire crust/topping out of the pan using the foil over hang. peel off the foil, cut it into bars, and then enjoy. tadaaa easy huh?
