Homemade Oreos

Who like oreos? because last time i checked, everyone did. they’re one of the best after school snacks ever and they can be turned into a cookies and cream cheese cake, cookies and cream ice cream cake, and cookies and cream ice cream. dude they’re just like the best dessert ever because they go like every way possible…. and people just like the thought of cookies and cream. yummers. on the go and where ever you need to go, these homemade oreos are a little bit healthier than the store bought ones because there’s none of those nasty chemicals and shit.

 what you need:

  • 2 sticks unsalted butter, softened
  • 1 c. sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 c. flour
  • 3/4 c. dutch process cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt

filling:

  • 1 stick unsalted butter, softened
  • 2 tbs half and half
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 – 3 1/2 c. powdered sugar, whisked to remove any lumps

starting off with the cookies. of course its a basic cookie recipe, so cream together the sugar and butter until nice and fluffy. then add in the egg and vanilla extract and beat until incorporated.

in another bowl, whisk together your dry ingredients, (flour, coca, baking powder and salt) until there arent any lumps and then gradually beat it into the wet ingredients until a lump of dough is formed that pulls away from the bowl.

split the dough in half, form them into flat discs, and then wrap in plastic to chill in the fridge for and hour.

preheat the oven to 350° F set the rack to the middle, and lay parchment paper or a silicone sheet onto a baking sheet

taking one disc out at a time, roll the dough out on a lightly floured surface into a sheet thats about 1/8″-1/4″ thick. cut out circles about 2 inches in diameter, or a similar size in a different shape. like a heart or so. make sure you ahve an even number of cookies so then you can make them into sammiches

place them an inch apart on the prepped baking sheet and then bake for 11-13 minutes, until they resemble normal cookies and are golden brown around the edges. remove and let them cool completely so then they dont melt the icing.

 

take the butter and beat it until smooth and then add in the half and half, vanilla and salt. beat until well incorporated. then, half a cup at a time, beat in the powdered sugar, until it comes to the consistency that is a little thicker than regular cupcake frosting that is lump-free.

pour the filling into a piping bag thats been fitted with a large round tip and pipe icing onto half the cookies, and then top it off with the other half of the cookies. yummy. let the cookies set for 10 minutes. voilaaaa oreo cookies yummyyyyy
